The Corporate Flight Attendant Catering Guide is a collaborative effort of Paula
Kraft of Tastefully Yours catering in Atlanta; Marsell Amineddine of M Foods catering in Cairo, Egypt; and Georgia Food Safety Professionals’ Jean Dible. The publication, introduced in June at the NBAA Flight Attendants Conference, is available free in PDF format through www.corporateflyer.net. The 26-page guide is designed to streamline in-flight catering procedures. Covered are such topics as auditing and qualifying your caterer; the flight attendant as a food handler; cleaning up the galley; potentially dangerous foods; and serving and plating. According to Kraft, more publications are planned.
